Heat 1 tablespoon of the oil in a large skillet over high heat. Add the pork and cook, breaking it up, until browned, about 5 minutes. Stir in the ginger and garlic for 30 seconds, then move everything to a plate.
Add the remaining oil and the eggs to the skillet and scramble until just set, about 1 minute.
Add the rice and press it flat. Cook without stirring for 2 minutes, then toss and repeat until the rice is hot and a little crisp.
Return the pork, add the peas, soy sauce, and sesame oil, and toss for 2 minutes. Finish with the scallions.
Day-old rice is the secret. Freshly cooked rice turns gummy.
